1. Recipe for vegan berry muffins

Our kids absolutely love these vegan berry muffins. They're not only delicious, but also vegan. Mixing the eight ingredients takes less than 10 minutes, and the baking time is a manageable 25 minutes. So, if you're looking for a tasty, quick, and easy recipe that's guaranteed to work, you'll love these muffins!

These vegan muffins contain no eggs, soy, or dairy products. A vegetable oil serves as the fat, the mineral water combined with the baking powder makes the muffins nice and fluffy, and the applesauce replaces the eggs.

Ingredients for about 12 muffins

  • 280 g flour
  • 100 g sugar
  • 1 pinch of salt and cinnamon
  • 2 tsp baking powder
  • 1 apple pureed into a mush
  • 100 g neutral-tasting oil
  • 150 ml mineral water
  • 2 cups of berries of your choice

Preparation of vegan berry muffins

Mix all the dry ingredients. Stir in the applesauce and the liquid ingredients. Now, if desired, fold in about 2 cups of berries, chocolate chips, or nuts. Fill the batter into muffin cups and bake at 180°C (convection) for about 25 minutes.

2. Recipe for a moist, vegan sheet pan lemon cake

Everyone should have a simple lemon cake recipe in their baking repertoire. That's why we're happy to share this one with you. This delicious sheet cake is moist, sweet, and lemony. And of course, the icing is absolutely essential!

Ingredients for a moist lemon sheet cake

  • 280 G Flour
  • 200 G Sugar
  • 1 EL lemon zest
  • 60 G Lemon juice
  • 100 G vegetable oil neutral taste
  • 170 ml Water cold
  • 1 TL baking soda
  • 2 TL baking powder
  • Icing: 120 G Icing sugar and 20 ml Lemon juice
Preparation of a moist lemon cake
Mix the dry ingredients together. Add the liquid ingredients. Spread the batter onto a baking sheet (approx. 23x23 cm). Then bake the cake in a preheated oven at 200°C (convection). Bake for 20 minutes.

Once the cake has cooled, you can spread the icing on the cake.

3. Recipe for vegan semolina chocolate banana cake with nuts

This vegan semolina-based nut cake with chocolate and bananas is low in sugar. Our children love their chocolate cake, and it's also the perfect snack for a trip to the playground or an Easter hike in the woods.

In terms of taste, the cake can definitely compete with a non-vegan alternative.

Ingredients for Vegan Semolina Chocolate Banana Cake with Nuts

  • 200 g ground hazelnuts, almonds or a mix of both
  • 200g organic spelt semolina or grits
  • 50 g spelt flour
  • 1 packet of baking powder
  • 2 brown bananas and 4 dates (dates and bananas can also be replaced by 400g brown sugar). If bananas and dates are not sweet enough, you can add an additional 50g raw cane sugar or a sugar alternative.
  • 3 tbsp cocoa for baking
  • Cinnamon to taste
  • 350 ml oat or coconut drink
  • Nuts for sprinkling, as desired.
  • For an extra chocolate note, you can add about 100g of vegan dark chocolate drops to the dough mixture.

Preparation of Vegan Semolina Chocolate Banana Cake with Nuts: Puree bananas and dates and mix together all ingredients except the nuts for decoration. Pour the batter into the baking pan and sprinkle with nuts. Then bake the cake in a preheated oven at 180°C (convection) for 35 minutes.
