Vegan nut cake without oil and egg
What's really ingenious about this cake recipe is that it doesn't require any butter, margarine, or other oils. You also don't need any eggs or egg substitutes. How is that possible? The secret is semolina. You can use either regular semolina or, for a healthier alternative, spelt semolina. The semolina also significantly reduces the amount of flour needed, making the cake even healthier and easier to digest.
In terms of taste, the cake can definitely compete with a non-vegan, unhealthy alternative.
Baking with semolina
Semolina is a great alternative to flour. It gives the cake structure without drying it out and provides a pleasant texture. Semolina also makes the dough nice and light.
High-quality ingredients make semolina a valuable food for children. It is very low in fat and contains protein, fiber, B vitamins, vitamins E and K, as well as folic acid, minerals, and trace elements. This makes semolina not only healthy but also tasty and versatile.
Since semolina absorbs liquid, the dough should be nice and liquid when you put it into the baking tin.
